September Baking – Lemons and Poppy Seeds

Last month our cakes flew out the door and the surprising thing was, our Spiced Pear Cake sold almost as well as our Chocolate Cookie Cake. That never happens! Our chocolate cakes always out sell our non-chocolate cakes. So this month I wanted to back it up with an equally loved flavour, Lemon and Poppy Seed Cake.

Why Lemon and Poppy Seed?

I have been talking about testing either a lemon and poppy seed or a orange and poppy seed cakes for a while. I went with the Lemon and Poppy Seed Cake as we had such a huge response to our handmade lemon curd when we used earlier in the year (on our Lemon and Raspberry Cake). It didn’t take much to fall in love with this cake. The lemon infused cream cheese icing is quite literally the icing on the cake.

Where does the inspiration come from?

I am often asked how I come up with our flavours each month. The truth is, it is totally random. Sometimes I am inspired by a particular ingredient. I look at complimentary flavours and test combinations until a cake idea is formed. Other times, I spend a lot of time googling cake flavours, sweet treats and potential decorations. Some flavours are months, even years, in the making and others are formed on the spot. The Lemon and Poppy Seed Cake was definitely one made up on the spot. Fully formed and just waiting to be tested.

Fresh and in season

I love working with fresh in season ingredients and the smell of lemons just fills the kitchen. It’s an amazing way to work. The thing I love most about making lemon curd is that the recipe was given to me by my brother. It was given to him by an amazing chef and mentor who instilled a passion for cooking in him. It is a legacy that I am thrilled to serve to our customers.

Once the cakes hit the oven, the curd hits the stove and is cooled and ready to put on the cakes once they are cooled. Works like clock work. We have recently had an overhaul of how we operate our kitchen during production. Looking at ways we can save time and be more efficient. This lemon curd fits the bill. It gives me such a thrill when I see my vision come to life.

When I think of lemon and poppy seed cake, I think of tangy lemon curd and sweet cream cheese icing.
